This lovely wine comes from a small winery perched up on the hillsides of Etna. The Palmetto winery is located in Catania, Sicily, in a 600-year-old building. The property has been revitalized, and the original structure was restored in 2011 to its 14th-century glory. They still continue to honour and use the ancient techniques of the winery. Palmento uses a unique method of wine making for their traditional location. With the use of gravity, freshly harvested grapes are placed in fermentation urns which allows the juice to decant into steel tanks, that run down to the cellar. Each process has been designed to balance production with the architecture of the building. The vineyard stretches over a lush ten hectares in the gorgeous national park of Mount Etna. The volcanic terrain makes for ideal viticulture, with it's rich, lava-infused soil and the underground streams irrigating the vineyards. Served at room temperature, 18 C, drink now or over the next ten years.
